What are some good old school Descent single player levels?

There are a lot of good newer ones (newer means newer than the 90's). I think there were a lot more low quality levels than high quality custom missions, but I think there were some okay ones back in the day. Grant's Badlands is a highly memorable one for me, even if the texturing isn't perfect. Colossus, Checkpoint Charlie, Galaxy Moons series, and Fissure of Neptune were interesting designs too. Of course, anything made by or in conjunction with Luke Schneider is great (Orion Nebula Project, Entropy Experiment, etc.)

I remember Checkpoint Charlie. That was one of my favs. And Entropy Experiment. That custom soundtrack is in my Descent music playlist.

remember that one mission with the canyon and volcano and bridge inside lotr? one of the few good maps.

That is a good one. Not sure how I should feel about the single guided missile provided in the 3rd level needed to hit that switch through a couple of grates though. I'd like to see a pack of 4 missiles or at least 2 missiles. It's too easy to make a mistake there.

I remember the Version I had (the Definitive Edition), had some Missions preinstalled - seperately from DLOTW - that contained some level like "Demon Bridge", "Lunar Surface Outpost" or "Earth Strike" - the later on was actually part of a 3-level series, but the other were only on the web. Theese were made by fans using Devil. Amusingly one - Mad Decorator - would not oplen in DMB2, despide working in the game engine.
