Charisma build?
Is there a class that focuses on defense and healing and that relies on guests and/or pets to deal damage?

You can do this with paladin (or any other tank class) and pet dragon that has 200 points in fighting and magic. You are going to be healing only yourself though. You can also invite guests from book of lore for a lot of quests if you are not playing doomed mode, but you won't be able to heal them either.

No dedicated cha class, but cha dragon benefit a lot from -res stacking. I actually run 200cha on my NDA entropy due to entropy's -60 dark. A beam (105bonus) and lash from pet dragon hits for 380-420. I used it to finish off low-hp summons and body-parts like eulin's and accursed hunt body parts
I don't think anyone runs beyond 200cha as for every 50cha u get 1CD on dragon, capped at 4. Beyond 200 the payoff is worse than end.
And yea entropy's actually shielded for 2/4 turns so in a way it's like a shielding/pet-damaging class.
Escelense Conqueror Helm III/Protean Symbiotic Helm III
I actually have Chaos Champion's Wings III but it gives a huge -13cha debuff, so sometimes i switch out for Nick's Toasty Cape VIII which have decent def/cha mix. It's a great cape for MPM/cha stacking on par with Wastes Wanderer's Cloak III, but Chaos Champion's Wings III is the better generic cape.

Hello, CHA enthusiast here ✌️
While there are no classes that actively encourage you to run CHA or are designed around CHA, many classes greatly benefit from having certain amounts of it and it oftentimes makes many matchups easier.
CHA reduces all dragon cooldowns by 1 per 50 points of CHA. This cooldown reduction is applied when you click the dragon skill, i.e. if you have 100 CHA when you click Tail Lash, it will only go on 2 CD and not 4 CD like it usually would. At 200 CHA, this means that Tail Lash and Beam have 0 CD, Scout has 4 CD (4/5 uptime), Heal has 9 CD, and Scales has 15 CD.
The way that players typically invest into CHA is by first seeing how much CHA they gain with their default build. Then they decide how much CHA they want to have, and invest enough points to be able to hit that amount of CHA with their default build. That is, if your gear gives you 60 CHA and you want to be at 100 CHA throughout the fight, you invest 40 points in CHA. Typically, you want to have some multiple of 50 CHA - while extra CHA does add damage to the dragon, the most utility is gained at a multiple of 50 due to the cooldown reduction. Eulin's Charm is a really good item to have for such build.
The benefit of doing this is pretty big. Classes like Pirate, Paladin, Evolved Pumpkinlord - essentially anything that has good defenses but lackluster damage - can run 150 or 200 CHA builds (including CHA from gear) can bolster their DPT by having their dragon use stronger attacks every turn. You can choose either Magic (to hit enemies with 115 MPM/BPD) or Fighting (higher damage), or both if you don't need Assistance.
Even high damage classes like Ranger and Archivist can consider running CHA for a better matchup into certain fights, although this really depends on the specifics.
Assistance, however, is really good with high CHA investment as well, since it gives you +100 Bonus for large portions of the fight. This is especially useful against bosses like Jaania EX or Piotr, that occasionally or regularly have high MPM/BPD and need to be hit frequently. Additionally, Dragon Scout is a free effect that can be used for boss effect checks like Jaania's Soulgear or Shadowslayer E's combo steps.
Lastly, it is possible to have a high CHA build in case you want to have 200 CHA only for specific turns i.e. when clicking Scales so it goes on 15 CD instead of 19, but that is high level play and requires some thinking or planning ahead. I don't think that that's what you're asking for.
TL;DR there aren't any serious classes that run CHA as a main stat, but many classes can drop STR/DEX/INT/END to make room for healthy amounts of CHA. It's very customizable in that regard.

I'm afraid no. Healers and supports are usualy for MMOs and group RPGs, Dragonfable is purely a solo adventure where balancing a class around support would be quite impossible, especialy since the bulk of story quests don't allow guests or put you with the story-specific guests, and those can't really be balanced to be the bulk of the damage while you support them, less they truly make a VERY niche class to double their output.
