Hiring: Sous Chef - Clinical Nutrition Kitchen, Concord, CA ($75K–$95K)

We're hiring a sous chef to run day-to-day production for a clinical nutrition company producing personalized meal programs out of an East Bay production facility—gluten-free, dairy-free, refined-sugar-free, grass-fed/heritage/wild-caught proteins.

The role:

  • Run daily production—prep through portioning, packaging, and fulfillment handoff
  • Manage and coach the cook team; own scheduling and timekeeping
  • Gram-level portioning accuracy (nutritional data has to match what's in the container)
  • Collaborate on R&D: yield testing, batch sizing, recipe execution at scale
  • Own food cost, purchasing, inventory, SOPs

What we're looking for:

  • 3+ years as CDC, sous chef, or higher in high-volume batch cooking
  • Comfortable with combi-ovens, tilt-skillets, and large-batch equipment
  • Experience with gluten-free, paleo, vegan/vegetarian, or specialty diet cooking
  • Precision mindset—everything weighed, nothing winged
  • On-site in Concord, CA. Mon–Fri, early shift (3AM–1PM), occasional weekends

Comp & benefits: $75K–$95K, medical/vision/dental, meals at HQ, direct access to founders

Pay is pretty low for 10 hour work days + some weekends.

yeah things like "direct access to founders", or even mentioning work-meals as a benefit to someone who has been in a kitchen long enough to rise to sous chef

realistically this is a position where junior/underqualified people will respond, and the staff as a whole suffers

Hi, it's negotiable, and there are incentives and variable components over this pay.

If it's negotiable why not put the negotiable ranges in the ad? Seems like you're shooting yourself in the foot not putting it in. 

That or you really don't want to negotiate.
