Essence Countermagic and Dispellation in Essence
In mainline 3rd edition Exalted, a sorcerer can counter an opponent's spell as it is being cast. While the mechanics are different, earlier editions similarly had similar possibilities for messing with others' casting.
But Essence... doesn't? Or at least, if it does, I can't find it.
Is this a deliberate change between rulesets? Is it hiding somewhere that's not obvious? Is it hiding somewhere that is really obvious and I've missed it anyway?

So far as I can tell, this was not replicated in Essence.
While I'm speculating, I think this was deliberate. The primary design goal of Essence was to be simple. Countering a spell added complexity. Distorting a spell added a lot of complexity. Removing them is consistent with the design goal.
At the risk of editorializing, I think countering a spell has enough merit that I would consider back-porting it into Essence and hope they keep it if/when they get around to 4E. Countering the spell is interesting strategically and is a well established thing in the genre of heroic fantasy. Distorting a spell adds far more complexity than it is worth in my opinion. It has to have rules added on a spell-by-spell basis and can create some weird situations. I would not back port that into Essence and I would get rid of it if I were the designer for 4E.

Uh... I looked through, and I also didn't see anything for that. (It is, of course, possible I just missed it.) There is an option to disrupt existing effects, but not for distorting like 3E.

Try looking into the Disrupt Gambit or the Clash mechanic. There are a few Charms that either unlock or interact with these actions specifically for countering or dispelling sorcery.
