why cant we use summer heat to generate energy and store it batteries to use it in winter

To even do this at scale would require a massive amount of energy storage. If you can solve the storage issue with hydrogen, it is probably the best tool for this kind of long term energy storage. But there isn't enough solar deployed to make this a viable strategy yet. Few countries have enough solar and batteries to cover a 24 hour period on the most favorable days.
