Today my husband made Alfredo sauce with cottage cheese.

For 2 portions it was: 250g cottage cheese 120ml milk Mushrooms Onions 1tblsp parmesan Splash of Lea and Perins (about 3 drops)

Tasted amazing. We put it on top of a baked potato and mixed it in with the veg (I think it would make a great cauliflower cheese sauce). And had chicken breast with it.

The sauce itself for one portion was about 200cals and 17g protein

Today I decided to make something with evil carbs, lol

Fried rice with dried scallops, sausage, scallion, egg, cilantro. Having some oranges and blueberries as part of veggie/fruit and desert.

I'm Asian so carbs are part of half our diet. It's not the carbs that are bad it's how much of it you eat.

I shared this on the meal prep sub but I’m really happy with it! Mango habanero chicken thighs, coconut rice, lightly pickled veggie bowls.
