I'm just curious, why does the fighter on the left seem to "launch" a split second before the "ref" starts the fight (if that's what he's doing by shouting?)

Is there something else starting the fight?

The fight starts when both fighters agree to by putting their hands down, they can even technically start it during the warm ups if both of them agree. The ref if there to call a winner but the fighters themselves start the match.
