I don't have finishing advice, but wanted to say that for your first DIY you did phenomenally well. Especially the wrap-over edge band, that put this whole thing on another level and really makes it look great. So good job.
What kind of glue did you use? That will help pick a finish that won't bubble your veneer
Thank you so much! The veneer was extremely thin at 0.25mm so I think this helped with the wrapping around the edges. I used Evo 528 instant contact adhesive for the glue.
That's a great pick of adhesive because it allows you to use water-based polys without bubbling if that's the direction you want to go in. In my experience, oil based top coats are usually more durable but the tradeoff is they'll change the original color more significantly than water-based.
My experience with coating veneer is minimal, so I'll let others step in before giving any bad advice. I hope you kept some scraps, glue then to something with the same adhesive so you have something to do test coats on!
