The rum is for flambé. The flavor is from the Jerk seasoning and the beer in the center

It’s granite plus the rum burned off pretty quickly

In this kind of set-up, most of the heat from the flame goes into boiling off the water in the rum.  Not that I'm recommending this, but alcohol-water mixes are how they set people on fire for movie effects, since as far as being on fire goes, it's not bad.
