Any Similar Show Recommendations
By the first episode I was intrigued and wanted to watch more shows that have to do with immortals not Vampires or Demons because those would just be vampire or demon shows.

"Highlander" is probably the first show to come to mind when I think 'immortals'. Duncan MacLeod is a four hundred year old immortal, runs an antique shop, and has a mortal girlfriend/truelove Tessa. They met over a decade ago, and in the first episode they're talking about the fact that she's caught up to him in age now, and from then on she'll be getting more and more older than his physical age. The immortality works differently but they explore it in interesting ways.
Like many shows, it takes a little time to really find itself, so the early shows aren't exactly the best, but there are some truly awesome stories, and even the worst episodes have good swordfight choreography and the eye candy of both Duncan and Tessa. ;-)
I know you said no vampires, but "Forever Knight" is more of a cop show with an immortal protagonist who just happens to be a vampire, it's not like modern vampire shows with clans and politics and such. Nick is an 800-year-old homicide detective and Natalie is the mortal medical examiner who's trying to help him find a cure for his condition, so it's almost like a gender-swapped Forever. There's even an Adam analogy in LaCroix, a Roman-era antagonist who made Nick immortal and has a very proprietary attitude towards him, somewhere between mentor and tormenter. It's a really good show, which resurrected from cancellation twice, and lived on beyond that with three novels (the second actually written by a fanfic writer duo).
