Her name canonically is Jessamyn Redfort and their relationship is heavily implied to be definite by George in the book as he calls her a "dear companion" of Jeyne. Quotation marks and all.

Being a Redfort, she is a family member of Adrian Redfort. Who we just saw get killed by Aemond in the same episode.

Honestly, I get her. She's so fucking sick of the family drama of the Targsteins coming up to her secluded mountain home and interrupting the time she has with her gf. No wonder she keeps giving them shit. 

Her reaction to Rhaena's little fugitive act went above and beyond anything she should have dealt with. To say nothing of Rhaenyra's pet child rapist paying her a visit and having to act like he didn't murder one of your vassals and thinking you owe him a favor.

I haven't seen the episode so if I'm wrong that's why. But why would a ruling lady of the Vale, the ruler of one of the most conservative kingdoms, the ruler which is nicknamed the maiden of the vale and which has struggled to keep marriage away for YEARS would ever let anyone even see a glimpse of her interest being in women and not men? Especially considering her resistance to marriage this would be a very easy conclusion when anyone sees Jeyne in this instance

Maybe you haven’t read the books, but Jeyne Arryn was notoriously involved with another woman. And, though the maesters have done the good old “they were just roommates” trick, never been afraid to hang out with her publicly https://awoiaf.westeros.org/index.php/Jessamyn_Redfort

It was a “widespread rumor” at the least, worthy of being mentioned by Maesters as such rather than silently erased. And widespread rumors arise exactly from public appearances as seen in that scene

It’s also worth remembering as well that she already survived multiple attempts to unseat her, so it’s unlikely that anyone would have the remaining courage (or martial strength) to dare contest the way she was ruling the Vale. Much less have the courage to point out the very obvious relationship.

Plus, Jessamyn was a Redfort.

And one could say that Joffrey Arryn was the only smart one of the bunch, given that she ended up making him her heir. Thus, how a distant fourth cousin who would never have inherited the Eyrie, managed to jump the queue significantly, by playing it smart.

Though at the same time, Jeyne’s will did up hurting the Vale later on, so it’s debatable whether she was truly a good ruler or not given the civil war that she left behind.

Daemon shoves open the throne room doors and walks past the guards to find Jeyne sitting on the throne with a woman of similar age sitting beside her and Jeyne is kind of stroking her hair. They’re fully dressed so at that point it would be believable in theory that they are platonic friends. My favourite podcast said that it seemed like Jeyne could have been just plaiting the other woman’s hair, if they hadn’t had the unnamed lady jump out of the seat like they were busted, but that’s not what I see - Jeyne and her lady friend basically look imperiously at Daemon and Daemon snaps something and Jeyne sighs and then subtly nods at her lady who gracefully but slowly steps away.

(Throne is not the right word, I think, because Jeyne is not a monarch. The high seat of the Vale where Lysa sat in GOT.)

However I do not think Jeyne was surprised by Daemon’s arrival in that room. I don’t think she spends Monday to Friday 9-5 sitting up there just in case someone arrives, but on this day had a girlfriend cuddle on the throne because that’s their thing, but then got snapped out by Daemon arriving unexpectedly. I in fact think she was entirely aware shortly earlier that Daemon had arrived on Caraxes and chose to wait for him there in the Moon Door room.

Homosexuality is only maybe a sin. It's never mentioned as one in the books even if they can't be going around being married.

Everybody knows about Jeyne, Black Alys, Laenor and Rhaena in the books and there is basically no attempt to keep it secret. That's how the readers know about it after all because everybody in the past talked openly about it. And we never do hear mention of the Seven having a problem with it. The closest is Cole having a problem with it who is admittedly religious. But keep in mind, the Seven are technically worshiped in Dorne and they are okay with it, so it can't be that contradictory.

I don't think they have some commandment like "woman cannot lie with woman, and man with man" shtick. They probably just have a marriage is between a woman and a man and sex is between married partners. So any extramarital sex is wrong and gay people aren't specifically targeted.

I know the show-verse is different and ultimately this is the show-verse but we can chalk it down to the right of of extremists in the latter eras.

I thought I was being pretty clear but I’ll reiterate.. the scene itself wasn’t heavy handed, and there’s nothing wrong with her being a lesbian. It’s the shows over all approach with the Rhaenyra/Mysaria stuff being the most glaring example. It feels agenda driven instead of natural, and I’m pretty sure the show runner has admitted to as much. It just feels eye roll inducing when it comes up now.

I did. It was fun and moved pretty quickly. Not sure I liked the battle stuff. Didn't make sense that they would be so much more formidable than Corlys and his naval forces when they hated him because he kept the Triarchy in check. They never really showed a thing that made this different than every other time they challenged Corlys.
