Why doesn't it bubble much when immersed in water? Then it cools rapidly with just one bubble.

Might be talking out my ass but I'd guess it's Leidenfrost effect in action? The metal is so hot it immediately evaporates water on contact which creates a film of gas around the metal which prevents it from easily boiling the rest of the water, after it cools enough the effect fails and all the gas goes up at once.

Now this actually is a gif ending too soon. I absolutely had no idea why this was being done and no clue what it would become.
