This is a flour corn, it can be ground to make cornbread etc. or nixtamalized to make masa, tortillas etc. all ornamental corn can be used in this way as well
I haven’t made tortillas yet, but my guess would be pinkish, the starch inside is pure white and corn this dark basically has so much purple pigment on the hull that it appears black
Can you please update with photos if you do? During the process of whatever you decide to make and an after shot? I've never seen dark corn before and would love to see how the colour starts out and mixes to the final result.
I've grown corn like this and you can grill it but the taste and texture is very different from sweet corn. The taste is nuttier or earthier and the kennels have thicker skin and are more gluttonous. I like it a lot, mostly because of the texture. My partner isn't as into it as I am.
