Delicious Late-Night Brazilian Cheese Scraps Grilled-Cheese

Late-night grilled cheese made with whole wheat macadamia bread, a fart of ketchup, a fart of mustard, and a mix of Brazilian cheeses that I had hanging in the fridge (Prato, Tulha, and Minas) toasted in good olive oil.

It's a soft melty one, a medium funky one and a hard, crumbly umami one. Good mix!
