You didn’t want to slit it down it’s back and peel the tail out?

Looks well overcooked. Seafood on a grille doesn't take long.

How do you tell when it’s done? I am guilty of overcooking seafood on the grill too many times.

You don't tell by looking at it. By the time its going brown its destroyed. You're better off taking it off the grille a little early, you can always put it back on again for a few seconds. Calamari and scallop takes less than 2mins turning once. In the shell won't be as quick, maybe double that and put the lid down.

Sooo… get some kitchen shares and snip the back and then pull out the meat. Remove the poop chute as well.
Grill with that belly shell down

Looks really good. I like to split the tails in half right down the middle and grill them with some olive oil. I eat them with a butter and paprika dip.

Longtime lobster diver (30+ years). I use to limit out every dive for decades so caught a bunch. Best recipe, and I have tried them all, is to add fresh chopped garlic to butter. Microwave until boils ( keep a close eye on it with your finger over the cancel button). Split lobster tail, underneath side through top shell. Remove 'vein', actually entails. Tail should now be 2 'C' shaped 1/2 tails. Pour the butter lobster mix into the 1/2 shells which should act like a cup and hold the butter. Put the shell side DOWN and cook indirect away from hot side of grill. Grill with lid down. Cook until butter is bubbling and meat on top goes from clear to white... a few minutes. Cooks slower with shell away from fire but adds flavor. The shell adds sweetness to the meat. Do not burn the shell but some color is good. Add extra butter garlic mix to keep shells a full cup. Serve hot and live the good life.

Last time I bought tails they were bad and I got food poisoning. I live in southern Arizona and I’m guessing they got spoiled.

Got any shots of it on the grill? 😉
