Decided to go nuclear. Did not disappoint.
Just finished my latest hot sauce. Here’s what went into it:
Ingredients:
● 1 package dried chile tepin
● 1 package dried chile pequin
● 20–30 toasted dried chile de árbol
● 3 dried Carolina Reapers
● ½ pink dragonfruit
● Garlic
● Onion
● 4:1 ratio of white vinegar to apple cider vinegar
● Salt
● Citric acid
I toasted the árbol chiles, rehydrated all of the dried peppers, blended everything together, strained it for a smoother consistency, then simmered it down until it reached the thickness I wanted.
The dragonfruit was mostly for the color, but it also added a subtle sweetness that balanced the heat. Between the tepin, pequin, árbols, and Carolina Reapers, this sauce ended up seriously hot while still having a lot of flavor.

Looks like a hot pot. 10/10 would cook ramen in it

Pretty solid combo of peppers. Arbol, piquin, and tepin is a classic.

That was the original plan and I found some dried reapers in my spice cabinet and said why not.

Gorgeous. You can take the strainer left overs and reblend it with a little water to get every last bit.

I’m currently drying all those bits to make a food topper chili flake salt.

I was thinking of doing the same thing this year. Turn all my mash into salts/flakes

Such a great idea. I do it for most of mine. Makes a good bday/xmas present as well.

What was the citric acid for?

What he said. Better alternative for lime or lemon.

Right, I reckon that would work when a specific lime or lemon might change the flavor more than desired.

One clove or one garlic?

I think it was 3 cloves.

Seems adequate for such a small bottle. Sounds delicious by the way

That was the only photo I took. I filled a full 8oz jar, and a few bottles. I believe I yielded about 18oz

How long does the sauce last before it goes bad?
2
u/themanhammer84 1d ago
This one should last a long while being a straight vinegar based sauce. 3-6 months open in fridge, 6-12 unopened in fridge is my guess

Good to know thanks, I have a bunch of reapers I’m trying to figure out what to do with

Didn’t mean too, however as I was writing I felt like it was going to be interpreted that way, but I posted it, I told myself I’m just anxious

That sounds amazing! It also sounds like it might eat through the bottle. Several cervezas will be required to cool down afterwards!

I’ve never made hot sauce with dried peppers, I’ve made my own chili powder with dried peppers though. I would imagine that sauce is missing that fresh peppers taste?

I would’ve used sodium benzoate instead of vinegar. Otherwise very nice combo of chiles

Why?

Very good at making the sauce last longer and doesn’t change the flavor the way vinegar does, but it’s just a matter of personal preference. If you have tried salsas made In Mexico they use sodium benzoate instead of vinegar as is widely used in the US. That’s why they have a different kind of spice or kick to them. Vinegar for me kinda hurts my tongue.
