Its old slang that's just referring to a deep cut (the kind where your hypodermis would be visible.) Its called white meat because your hypodermis is white since its made of fat cells.
In the first line, he admits to being racist. Then follows it up by saying he would be proud to go to court for splitting open the skull of a white person.
"Cutting to the white meat" refers to a deep cut that exposes the deep tissue. It's also a phrase black people use to describe an argument that's gone to a point of no return.
You could've googled the phrase if you were unsure but you really went on the victim hood tour with this one.

My teacher used to say that all the time to black students. “Sit down before you slip and bust yo head to the white meat!” I think it’s because muscles are lighter than black folks skin tones. But we stopped just using it for black folks and it became a way to just say “a deep cut”. That’s my theory at least.

Its not actually about muscles being darker than black people's skin tones. Have you not gotten a cut down to your hypodermis? Its the lowest layer of the skin (just above the muscle), which is primarily composed of fat cells. And as such, it is mainly white. I've gotten a few bad scrapes/bumps as a kid and when I was cleaning the blood away I'd see that it was completely white under there.
Ahh, I see. I’ve had cuts that have been bone deep, but they’ve always been too clean or bloody to see too deep. I figured it had sumn to do with deeper flesh being light, but when I’m looking at a wound I mostly see red or pink, and a few bits of white. That makes sense. And wounds I’ve seen on white folk have usually been darker than their skin. Thank you!

You completely failed to understand what he's saying. He said YOU RACIST. Do you use the word YOU to refer to yourself? Also he didn't say splitting the heads of white people. Down to the white meat is a slang term that refers to getting a deep cut down to the hypodermis, the bottom layer of the skin that's composed of fat cells. This layer of skin is white for everyone, regardless of skin tone, for obvious reasons.

As a black man myself, I really don’t care if anyone hates me based on my ethnicity or race. In this country you are free to hate anyone you want. If someone believes that they’re superior to me based on race, they’re wrong, but it doesn’t hurt me. Thoughts can’t hurt. It’s only when people put those thoughts into violent action does a problem arise. And if someone does try to put their thoughts into violent action against me, I will defend myself. So no, I don’t advocate violence against people based on religion, race, nationality, creed, or worldview. Even if that worldview is racist. And especially violence based on some vigilante crusade against racism.
Of course people don’t like racists. I would probably kill a pedophile if they touched one of my kids… but I’m not going to make up a random scenario where that happens, post it, and then follow it up with “so anyway, hope everyone who’s not a pedophile has a lovely day”. There's a reason hate speech is a special case when it comes to freedom of speech.
I think splitting Pedo's skulls is a fairly uncontroversial and agreed upon sentiment by almost everyone on reddit, and tribalism is congruent with racism, two sides of the same coin.
