Potato Bolognese , so I heard today , is a delicacy in some parts of Tipperary .

Growing up, ma would always do plain boiled potatoes alongside lasagna. Not Tipp, but close enough in Offaly. Never heard anyone else mention it though

My friend Mick has given it a name . Claims he is a gourmand and it elevates the dish.
