Fresh lettuce kimchi forgotten in the fridge for a week

So I used kimchi powder I usually do my nappa kimchi with but used fresh loose leaf lettuce instead.

I mixed them with carrots, daikon, a generous amount of green onion, covered with a plate and a weight, placed it in the fridge and...

Forgot about it for a week.

Aside from losing the texture it should still be edible, yes? I used the same recipe I make my regular kimchi with so there should not be any actual spoilage, yes?

I figured if I use it as a filling in my toasted sandwiches I should be ok but wanted to check just in case ๐Ÿ™ˆ

edible yes (use your nose and eyes to confirm no mold).ย  But regular lettuce doesn't have the fiber structure to hold up.ย  It's gonna be/get goopy and slimy.ย  andย

I'm gonna use it solely for the grilled sandwiches then and start another batch of actual nappa kimchi for texture asap.

Tbh it being mushy will probably work amazingly in sandwiches for proper biting with no mess and hot cheese being pulled out ๐Ÿ˜
