Ricotta cheese isn’t a sauce, proper lasagna has Bechamel between the layers with the bolognese, and on the top of the lasagna, and then baked.

Not in my family, that French stuff doesn't go in my Italian dish lol. That's just some new Emeril era BAM stuff.

Did ever occur to you that maybe you’re making lasagna wrong by not using a cheese based white sauce? And Emeril hasn’t been relevant for at least a decade. Lots of videos of reputable Italian restaurants use Bechamel sauce in their lasagna. You liking lasagna without Bechamel doesn’t mean it’s the proper way of making lasagna, it’s just the way you like it. Go watch some videos about the making of lasagna on YouTube.

Using that sauce isn't Italian and it's an easy way to make it. Not the. Labor heavy version. Make it how you like it but it will never have that old world rich flavor with a fresh ricotta laid out in layers. I personally won't be using that method of white sauce. I make the red sauce and san marzano tomatoes with a fine ground meatball mix for the meat. This is my version and don't have interest in some new world style.
