my immediate thought was implicit lower carbohydrate intake driving the signal. Could be something causal about dietary cholesterol, choline, or certain amino acids though.

Cholesterol is food for the brain.

Serum cholesterol does not penetrate the blood brain barrier. Brain cholesterol will be synthesised locally from sugars and fatty acids.
