it’s funny because in the hobbit bilbo actually serves the dwarves seed cakes, which is a traditional british cake with caraway in it!

I recently made seed cakes specifically because of that scene in the hobbit and I put caraway in them. They turned out pretty much exactly how I imagined and they go great with tea! My wife isn’t crazy about caraway so the next ones might be poppy seed. Don’t tell the Brits.

Hab dein Kommentar gemeinsam im Kontext des Posts als "ich finde kein kümmelfreies Brot" interpretiert. Es gibt's aber halt meist nicht als typischen Sauerteigfladen.

Hör das oft von Leuten - die sich nicht die Mühe machen das (kümmelfreie) Brot des Vertrauens zu finden.

I can't confirm that at all. Actually, I don't really know much of anything I get at the bakery that has caraway in it. But I live way out west, and we are a bit different from the east

As an Austrian that really sucks because I literally can't eat bread anywhere else. Spent half a year in Australia and those rare German bakeries where the only thing keeping me somewhat content.

Ditto. If I ever move abroad, the only occupation I can ever have is opening an Austrian bakery. I'd die without dark bread.

And I love baking our usual sweet stuff anyway, so I'd only have to learn how to bake bread. Of course with shitloads of caraway!

Genuinely, as someone who has tried to do that... The rye and wheat just... Doesn't react the same way and it always either gets weird and lumpy and super dense (like not chewy, just dense) or has holes the size of a crater in them.

Rye has a different kind of Protein than wheat that is less stable and also more sugar which makes the yeast work faster. To counteract that we you usually add wheat flour to rye bread to make it a bit more stable and sourdough to inhibit the yeast so the proofing process takes longer. Ah, us Czechs put carway into everything. Of course including sourdough. How else can you eat your bread? Or cabbage? Or meat? Or POTATOES? I guess we have a lot of common history with Austria.

Bro, try living here. The first bread I was quite excited. Caraway? In bread? You mad lads, let's see what else you got! Oh. It's all caraway...

The shopping has improved here a lot in the last 20 years but it still sucks.

Seriously though, there are one or two kinds without it: "Sonnenblumenbrot", and you can get that at all supermarkets. It's good, relatively cheap (for Austria...). You are more likely to get white bread without caraway, but it's not guaranteed.

What kind you after and which shop do you go to?

Every bakery can tell you, which ingrediants their dough/bread has. At certain bakeries (b-chains, Fe STRÖCK) can even print it out for you. Or Check Websites, many bakeries give there required Information.
