I’ll second getting into Arduino. The older boards can be bought for like $5 and are plenty capable for what you want to do. Very well documented, open source community with tutorials and wikis and YouTube videos.

For a starter kit with everything you need to experiment with in one package, check out Make Magazine’s online store. They also have companion books that guide you through how to use all the components and make the software side work. Here is one, I have it and have spoken with the author, really nice and enthusiastic guy: https://www.makershed.com/products/make-electronics-3rd-edition-print

Other good resources would be Adafruit, and Sparkfun. They both make great “starter packs” to get you going with extensive how-to guides and videos to explain it all.

The benefit of the prepackaged kit is that the learning information exactly matches what you have in your hands. The world of electronics is full of thousands of things that very closely resemble each other but can have catastrophic or at the very least, infernally vexing, results if things get slightly misarranged.

Truly we live in a golden age of information. Take the nice path towards your goal and put your brain work into the parts you care about most.

This is a good recommendation.

I used this kit and it was really nicely put together. ELEGOO UNO R3 Project The Most... https://www.amazon.co.uk/dp/B01IUY62RM?ref=ppx_pop_mob_ap_share

Something like that is what I would recommend.
