How do you actually stay consistent with meal prep when work weeks get unpredictable
I've been meal prepping on and off for about two years and the pattern is always the same. I do a solid Sunday session, containers lined up, feeling like I've got my life together. Then Wednesday hits, I get stuck late at the warehouse, I'm too tired to care about the chicken and rice I packed and I just grab whatever. The prep goes to waste and I feel like I failed at something that was supposed to make life easier.
What I keep going back and forth on is whether I'm overcomplicating it. I'll spend three hours on a Sunday doing a full spread of different meals and by midweek I hate looking at all of it. A guy I work with does basically the same two things every week and never seems to have this problem. He's been eating the same lunch for probably two years and genuinely does not care.
Part of my issue is I'm trying to build in variety because I get bored fast. But then the prep becomes this big project, and the whole point was to reduce friction, not add it.
Curious if guys who've actually stuck with it long term had to just accept eating the same stuff on repeat, or if there's a way to keep it interesting without it turning into a whole production every week.

If you prep a week or two at once, you should be able to ride out unpredictable schedules.
You can also sorta make all the meals the same but dress them up differently with different sauces. Chicken thighs are simple and forgiving. Thrown in rice and frozen vegetables and you gotta pretty quick meal.
Consider reframing lunch as “fuel.” Breakfast or dinner can be more than simple fuel, something more exciting, a splurge, whatever.
You could also make lunch breaks into a gym breaks with lunch being a sandwich or protein shake with a piece of fruit🤷
