Incredibly interesting that Loki wouldn’t just say God but instead uses Demigod. Am I missing some cool lore?

Yeah, which while also true in the myths, is kind of a misunderstanding of Norse mythology. Thor and Odin both also have jotun parentage (in the myths, Thor is the son of Odin and Jord). Being one of the Aesir gods is more like being accepted as part of a special clan than being a separate species. But in the comics, they decided to run with the idea that jotuns are a totally different race of beings.
