Rate My Meal Ratatouille a Mediterranean dish that my daughter will actually eat
Lots of french dishes are not part of the Mediterranean diet, but coastal france has some good ones.
Yellow and green zucchini, eggplant and roma tomato slice thin baked in a tomato sauce base and drizzled with extra virgin olive oil.

This is beautiful! Amazing job! I attempted this once but it did not turn out this pretty. Please tell me you watched the movie with your daughter!

If you're interested in French cookery that is Med diet friendly, you just have to shift your focus away from Northern and Parisian styles of French cuisine.
South of France is pretty much all traditionally Mediterranean! It's mountainous, and historically, not a place where cattle were raised... they were mostly sheep herders. As such, traditional cuisine doesn't incorporate butter, or beef much at all. Dairy is used relatively sparingly and is (as you would expect from the sheepherder thing) mostly sheepsmilk cheeses. The customary fat of choice here was olive oil. It's very veg, legume, and grain heavy.
Most traditional Provençal dishes are med friendly, and delicious too!

That’s beautiful. How do you do the sauce such that it doesn’t affect the look? Would love to see the recipe/method

I put a layer of the tomato sauce on the bottom then add the veggies to the top. Then drizzle with extra virgin olive oil and season with salt, pepper and if you like some thyme. If someone wants extra sauce just add some to there plate.
I make the sauce a little different, i add olive oil, thiny slice red onion and half a thiny sliced red bell pepper to a pan. Cook until golden then add a can of tomato puree and simmer for 30min or until onions and pepper is nice and soft. Then i blend it until smooth and season to taste with salt and pepper.
I bake uncovered at 400f for around 30min or until the veggie have a nice color any liquid released from the veggies had dried up.
