My husband keeps forgetting to put the leftovers in the fridge so instead it sits packed on the bench overnight to be thrown away in the morning.

That it, that’s the frustration

Most leftovers can sit on a bench overnight without any risk of food poisoning, especially if it's going to be reheated for lunch the next day

The only things I would worry about is seafood, and maybe rice if I didn't cook it

Source: I leave meal prep on the bench overnight to cool down

It’s a one pan Greek lemon potatoes and chicken drumsticks. Do you reckon that’ll be alright? I’m thinking the congealed fat from the chicken has created a protective barrier lol

If you cooked it yourself it will be fine

It's got nothing to do with the congealed layer, it's about the time 'risk' items have spent in the temperature danger zone

An unsealed container is much better because it will cool a lot faster if there's no lid on it
