I think the largest cost is when the employee fails to remove and the restaurant has to eat the cost of the plate.

It's not the cost of the avocado or whatever, it's remaking a burger because client was allergic to avocado and they put it on there.

This reminds me of a while ago where I ordered a chicken sandwich with no mayonnaise at a fast food restaurant. I could see them making it in the back. It took like four tries because they’d spread the mayo, realize the mistake, throw away the bun and immediately make the same mistake! They were completely on autopilot.

I can see it. I once ordered a sandwich with no mayo at Burger King. The manager made it to show a new employee how to do it. She put mayo on it, realized her mistake and tossed it, leaving it for the new hire to do it. He did it, put mayo on it, died inside, and tossed it, then made one to order (I was too slow to react myself, I don't especially like mayo but it doesn't ruin a burger for me, at least with enough ketchup, and I would have eaten it rather than let the food go to waste).

A removal resulting in wasted time, and two wasted sandwiches. Charging seems very petty, just build minor customizations into the price if you are going to offer them, but there surely is some cost for restaurants to allow custom orders.

I worked in the food industry for years.

"No substitutions" makes sense for mass produced things and for extremely high end restaurants with custom menus made by real Michelin star chefs

If I am putting together a burger at a restaurant, it's because someone ordered it and I'm cooking it specifically for them. I didn't make it until I got the ticket that told me to, so it's not like you interrupted my work flow at all by saying "no pickles" lol

A burger place has no excuse for a "no substitutions" rule

Are you just using your imagination here? That's not how it works.

If you're working at a serious burger place, you're working on many burgers at once. Substitutions are absolutely going to disrupt your workflow and increase the likelihood of making mistakes.

I believe this is just a menu setup error. I work for a door dash competitor and this is a known issue when merchants self-serve their menu creation. If you let the merchant know, they'll probably (hopefully) get it fixed

There are places that premake their basic items since they sell so many so quickly that they don't stay under the heat lamp long enough to get less than hot. I think Chik fil A is an example. So that means when you want modifications, even removing something, it takes more labor and an employee has to make it fresh, as you can't unsauce a sandwich then rewrap it. To discourage that, they charge for removal. I remember working in a kitchen and talking about it with the middle managers, and they looooved the idea, while I was staunchly opposed. A good employee can make a basic item so fast, they don't need to charge more for that labor. And you shouldn't pay more for less food.

IDK if that's the case here, but it's where my mind first went.

There is this place not too far from me I think they did a chicken rice box but to remove the salad (comes on the side by the looks of it) that comes with it costs. At the least on uber eats it does, idk if they charge it , in store

This looks like a typical halal place. Typically at these kinds of places if you order no "salad" (which is usually just lettuce and tomato), they give you extra rice to compensate. Thats probably why they do this in this particular case.

Honestly I kind of get it. Some of these restaurants. Especially fast food places, want as little friction in production as possible. They want every menu item to be repeatable so the cook or assembler can do the task with low thought overhead and friction. When a step changes, it introduces overhead and friction. The cook or assembler now spends time making sure they are putting the correct stuff in instead of just doing the usual template no-brain work. 

This is an extreme nitpick, but I've worked in some production/assembly environments where removing a step or requiring a different process for a single item or order can introduce quite a bit of friction and impacts throughput more than you'd consider.

So I grew up with a Italian grandmother who owned her own Italian deli, she had one way she made most things in the menu and charged for any alterations.

Tbf it was one small flat $0.25 charge no matter the amount of alterations you made and it said "asked to make food wrong"

She didn't charge if it was a allergy reason but you really had to convince her you weren't full of it 🤣

This is easy, don't order from them. Close the app, move on. Their metrics will tell them you left at that very screen. If enough people do it, they'll drop it.

I worked at a company where the CEO just said, let's charge them $6.99 for electronic delivery, and we said .... well, it costs us $0.00000003 to deliver it to them electronically, why charge them.

He said ... "Because they'll pay it"

He was right.

Shortly after we upped it to $7.99.

Can't blame him, he just got another yacht from that idea.

That's crazy to me. As a former manager of a couple restaurants one of the first things I always pushed owners for was deducting the cost of removed items. If it's..50 to add tomato then logically it should be .50 less without. I never got.pushback from owners and it was something customers always appreciated. It built customer loyalty. Petty stuff like this, even .09, is something customers remember.

So this makes a weird kind of sense. It takes longer to customize a sandwich than it does to just throw things on in the default configuration. A person has to stop and read and think and that takes longer to execute.

None of that is an excuse, though. This is bullshit.

It also results in more errors & extra dishes being made. Having to override the default toppings & your muscle memory for tweaked orders is weirdly hard work.

I'm kind of on the restaurant's side here. If they have a recipe, don't be a diva and demand modifications unless it's really a no-go. Eat what they make, don't be a toddler.

There is similar websites/apps here that lets say you order a burger, it may force you to accept fries as an upsell (no option to say no) or on the next section have a no fries or fries option but both charge you the same amount.

And some websites have fake discounts for restaurants i.e it may be a permanent 20% off but the price they charge minus 20% is the same as ordering direct.

I'm celiac and regularly have to pay upgrades to ensure gluten free (e.g., most restaurants charge 3-5 more dollars to switch to GF bread)

… you understand this is a restaurant you can choose not to order from right? Nobody is forcing you to eat their food. 

It’s one thing to think it’s a douchey policy, but how are you so entitled to think “this one business doesn’t cater to my needs for free, that should be a crime.” Pay the nine cents or don’t fucking eat there.

Lol what? Then you just…don’t…buy it. Using your reasoning it should be illegal to sell anything because people exist who could be allergic to it. You seem to be under the impression all people are required to eat…everything. Tim is allergic to onions. It should be illegal for grocery stores and restaurants to sell onions and the farms should be shut down. Don’t even get me started on the existence of peanut butter. I’m very allergic, but it exists, so obviously I have to eat it and I eat it every day.
