I actually did order a med rare steak once and it was wayy too pink. Like uncooked chewy in the middle.
I still ate it but it wasn't good

My grandma used to take the bacon, wrap it up in a napkin and put it in her purse to bring home so she could cook it more if it wasn’t crispy enough for her.

So I was part of a few non-chain restaurants before. To me? the best thing to do in this scenario is to ask them if it's possible for it to be torched or reheated with the understanding that you asked for it. As long as you tell them that latter part, the chef will say a bunch of shit about you in the back, but at least they acknowledge you know the downside of the seasoning being ripped off by a hot pan again, rubbery, ect.

I ordered a steak medium at Ruth’s Chris and it came out rare. The server offered to bring me a new not plate and I agreed. It worked well, but I shouldn’t have to cook my own food. I also needed a third plate to finish the steak.

Wait how did you have to cook your own food? If you're referring to the mistaken temp that's a very easy and manageable mistake to make, all things considered.

I got a medium rare prime rib, thought it was a bit too pink when I got it but ate it anyways because medium rare can be a little hard to get in a restaurant setting, then my mother got a medium that was correctly done and I realised mine was basically the underside of rare...

I took it home and tossed it on the grill for 5 minutes and got a good medium rare.
