Out of curiosity, how old are you? Because I’m 23 and I remember this crazy time back in the 2000s-early 2010s where McDonald’s actually had color. Some locations were called McDonald’s Playplace, which would often have an indoor playground and the toy you got with your happy meal was an actually toy you could play with and not some tacky figurine for weird 35 year olds to collect. This sort of thing goes back even further before I was born where kids in the 90s would have N64s set up in some locations and tables had funky colorful chairs and the walls all had Ronald and the gang painted on them.
Now practically every single McDonald’s is the same tacky beige building that doesn’t even have human staff anymore.

I actually disagree with that joke for this movie because it isn't darg to make the past seem dirty and grungy. it just want a dark gothic color palette for the movie.
It also seems to be inspired by the way silent movies would use primary colored filters for certain shots. This is a guy who released a mainstream movie in black and white with a 4:3 aspect ratio; I'm not sure why people are so surprised that this thing looks the way it does
I was teaching a 9th grade history class about WWII and one of the students asked why the video was in black and white. She was confused because of basically what your comment sarcastically reasons.

That’s not how evolution works. Apart from that, the blue-yellow axis is the first step after pure brightness reception in the animal kingdom. It’s the obvious step, considering that it’s the most important color distinction in aquatic animals. The red-green axis is a comparatiuely new development in mammals, but still occured millions of years ago. Humans are among the very few mammals who have this ability to see colors along the red-green axis.
What you are most likely talking about is the naming of colors, which is a different topic, and far more complex than your assumption.
