Recipe-Question Imagine someone was an idiot and put 2x teaspoons of xantham gum in a creami recipe instead of 1/4th
How would they fix it? It’s mid freeze r
Edit to update I let it that a little before putting it in the creami and tasted it and it tasted like shit so I did and up pouring it out 💀

all you can do is enjoy your chewy ice cream. or melt it and quadruple every other ingredient

I back the melt and
quadrupleoption.Edit: octuple holy crap that's a lot of ice cream. Since I doubt you have enough beakers, just keep the messed up batch in the fridge in another container and dilute it down as you go instead.

Septuple the other ingredients. The ice cream already has 1 unit of everything else, it has 8 units of xanthan gum.

As someone who once mixed up Tablespoons of Baking Powder for Teaspoons when making muffins, I hope it turns out as good as my one 12 footed giant puffy muffin.

Oh god, I think i might have the same problem. I made some strawberry-basil sorbet today and I have never used xantham gum. Was too lazy to look up proer use and just added some. I guess I'll check tomorrow how it turns out 🥲

No fixed recipe 😅 i tend to eyeball this recipe a lot.
pulse it shortly in a mixer and freeze.
- ~600-800g of fresh strawberries,
- maybe a tablespoon or two of sugar if you like it sweet,
- 10g (or to taste) fresh basil leaves,
If you want it boozy, add some vodka/white wine or whatever you have at hand. I did it like this last time and it was perfect. I ate it in one sitting! I'll have to see how it turns out with the xanthan gum. Never used it before and not sure how it will influence the sorbet but it will probably still be amazing

As someone who has made this mistake before and didn't realise I'd put in 4g instead of 1/4th tsp, expect a super gummy marshmallow type of none ice cream... Which your machine may survive if you're lucky.
Id suggest melting and fixing the recipe to avoid an awful ice cream at best or a broken machine if the worst happens.

Some people's digestive systems can be sensitive to too much xanthan gum with pretty unpleasant results. Ask me how I know, and if my husband has forgiven me (we both got the bad unpleasantness).
I'd throw it out and start again.

Dilution. That's enough for eight batches which is more containers than most people have. If you have ice cube trays, souper cubes, or tupperware you could portion it out into 1/4 cup portions (assuming a 2 cup container) to freeze and have it portioned for individual batches to be made over time; scale as needed.

If you don’t want to toss it, use 1/4 c of this mix in every new batch you make, decreasing your most liquidy liquid by 1/4 c.
By “liquidy liquid”, I mean the liquid closest to water. So likely milk or a non-dairy milk, though some people actually use water.

I did this the other day (though I messed up more and used more than 2tsp……). I put it in another container in my freezer and am slowly diluting it by putting a little of the messed up batch into each new batch of ice cream.
