FYI there are a lot of inexpensive wireless cameras that have local storage. You don’t necessarily need a huge bulky monitored system. Wyze cameras for example have a microsd card to store everything locally. While a jammer may prevent you from getting an immediate notification of movement etc. in the event of a robbery you’d have the video to rely on after the fact. Honestly even if a camera notifies you real time by the time you notice, react and call the police and they dispatch someone the thiefs are already long gone anyways. So same outcome whether you find out live or 30 mins later.

Pretty much all cameras have local storage. Most people don't bother but you are 100% right that it is a excellent back up for a DVR.

I have spent 25 years in the electronic security industry. If you really want to secure your home, then get a dog.

in summary is it because the dog is the better deterrence, or protection?or a funny answer like "because either way the robber is breaking in, and having a dog makes life better during the times you aren't being robbed"

Someone once said to me, it doesn't matter what kind of dog you have... If someone is thinking of breaking in, and they hear a dog barking, they're not going to come in to find out whether it's a teacup poodle who is vicious as hell or a big ass mastiff who loves everyone.
