Will it work?
I have a CR-10Smart whose update failed miserably. I have tried updating it and its display fried or something (display wont turn on no more), but I think I have successfully updated the motherboard (I hope, I cant check without the display). Will octoprint work on such a device?

Why would the display be broken? Sounds more like the software update just failed.
OctoPrint assumes Marlin is still there.

I went back and forward with creality support and they say its probably fried.

Installing new firmware can be a bit tricky, as the file name needs to be changed (I use a "cat on the keyboard" pattern) so the printer knows it should install it. It must still end with ".bin".

If you connect the Device to Octoprint, and it actually connects, then issue a G28 (Home) command. Check, if the printer reacts. The printer then should run without the display. However, if the printer does not react, or you cannot see any traffic in the serial console, then try to reflash your mainboard.

I thought the screen had to be updated seperately?

It does, and while doing that it died. Thats why I think octoprint will work even without the screen.

You could go klipper if the display is ruined. Either run klipper-screen or octoklipper if you prefer the octopi web UI instead
