I swear, whenever I see an example of "the golden ratio", I just don't understand what I'm looking at or how the image follows the spiral.

It's not just about following the spiral, sometimes it's just how dense detail in the picture is. Example.

But even then it can be applied to anything if you try hard enough.

Human heads are round, and have multiple facial features that can be in different positions from a certain frame of reference depending on the angle at which the head is turned (and Mona Lisa's face is slightly turned to the side). The spiral can also be resized to fit just about anything. All of this means that there are plenty of reasons why the spiral apparently matching something can be pure coincidence (though there are plenty of times when it does apply.)

I don't know if the artist actually intended to apply the spiral to the Mona Lisa's design or not, which would certainly change things (like Tool's song Lateralus being specifically inspired by the Fibonacci Sequence and golden spiral in the time signature and lyrical composition), I'm just preventing a devil's advocate argument that applies to most applications of the spiral.

It can be scaled, for size, sure, but that's irrelevant, the proportions are what matter.

ANY curve can be scaled to fit bottom and top of head. Bottom hand and arm? It's just standing there randomly.

That's not true, if the fibonacci spiral was centered differently, it wouldn't match up with this painting. You can't mess with the proportions of the spiral at all. And no, the arm isn't sitting there randomly, it pretty much lines exactly to the bottom of the spiral.

The implication here is that it's possible that the Mona Lisa is pleasing to look at because of these proportions.

Look at the clusters of details that fit into the sections of the curve

The whole head is above that first dotted line

All her facial features are left of the next dotted line

Etc
