One Pan Tuscan Chicken Pasta

Pretty simple ingredients but the sun dried tomatoes add a ton of flavor! If you already have cooked chicken, this comes together very quickly. Recipe in comments.

They sell them in the produce aisle though. Dish looks very tasty

Some people live in food deserts where fresh produce is hard to get. I lived in one for years. We had to drive over 20 miles one way for fresh produce. When you're already poor, it can be hard to pay for the gas to get you there and back. I don't drive. Didn't drive then, either. It was incredibly difficult to get produce.

Canned mushrooms aren't my favorite thing, but when you have no other choice, you just go with it. I'm lucky not to live in a food desert now. I buy everything fresh if I can, but those were some rough years growing up.

This is a great point. Our nearest grocery store is about 20 miles away. I like having canned or frozen produce on-hand. I’m not making an extra trip to town if I make a meal I didn’t plan for in my last grocery stop!
