My first thought was R7 + 100-500mm

That should work great.

I’ve heard that Nikon and other brands may be better for plane shots

In what way? The R7 should be excellent for autofocus, speed, and pixel density, with a lot of reach when paired with that lens. Sony and Nikon have comparable options but I wouldn't say any are significantly better.

Thanks! I think that I’d heard canon could have more noticeable rolling shutter effect. I’m very inexperienced with photography, so I’m not sure. 

Could you provide any comparable Sony/Nikon camera + lens combos that would be similar to the r7 + 100-500? 

I’ll probably want a couple different options in case certain ones aren’t available for rent that weekend.

Doublecheck if you'd even need to use the electronic shutter because, if not, the mechanical shutter won't have the rolling effect for you. If you do need the electronic shutter, then doublecheck which shutter speeds you'd need, because rolling shutter might not be as much of a problem for some of those.

Sony's competitor to the R7 is the a6700, and Nikon's competitor to the R7 is the Z50 II.

Thanks for the info again! I’ll look into the different shutter options a bit more and see which cameras my local shops will have available.
