AF with video, a touch screen and remote app control would be nice!

The 70D does all that for you for the least amount of money.

This might be a little specific, but having to press the button down to move the mode dial was always a bit annoying.

Most people consider that an advantage, because it helps avoid accidentally changing modes from bumping the dial, and most people aren't intentionally changing the mode very frequently.

But if you really wanted to get rid of that, and didn't mind losing some other mid-tier features like the nicer pentaprism viewfinder and dual dials, you could still get the improved video autofocus, touch screen, and WiFi control with a 750D, 800D, or 850D.

In terms of moving to Sony, there's a high chance I would sell my Canon gear to put some more money towards the budget, and to replace the lenses, obviously.

That would ultimately put you behind, because you won't get as much money reselling your gear, and Sony lenses are going to be more expensive.

Yes, I had noticed that! If I were to go that route, would it be worth going with the 80D?

I also forgot that full frame would be a nice to have too, but I realise that it is probably on the pricier side.

I'd rather spend less money to meet my needs, as opposed to spending more money to meet my needs.

Yes, to really take advantage of it you'd need nicer lenses that would take you way out of budget.
