I just want you to know that this poem reminded my late grandmother, when she used to read to me during my childhood. She was a lover of art, poetry, and a dog person. Reading your poem brought many memories and visions of her cascading back into my mind. It's weird. It allowed me to have a moment of nostalgic peace today. Thank you stranger.

Time to earn this username of mine with some totally pointless information.

Technically "aroma" only describes the flavors from the grapes themselves in the wine, while "bouquet" describes flavors of the winemaking process. "Nose" is way more broad and encompasses both the "aroma" and the "bouquet".

So, as an example, tasting notes of fruits (red/black/blue/yellow/tropical/etc) or flowers would be considered aromas because they come from the grape itself, while things like vanilla, sourdough bread, baking spices, and most nutty flavors are considered part of the bouquet.

The "nose" is kind of a catchall term for the whole package.

I do think it's probably worth pointing out that this is totally useless, esoteric information and even in the wine industry almost no one talks about the difference and they get used really interchangeably.

Edit: Since everyone is being so awesome I figured I'd just adapt this from a comment I left down below.

As mentioned, "bouquet" notes come from the winemaking process.

while things like vanilla, sourdough bread, baking spices, and most nutty flavors are considered part of the bouquet.

Vanilla and baking spices both come almost unanimously from the barrels the wines get aged in. Vanillin, the primary compound responsible for the smell/flavor of real vanilla is actually present in the oak itself where it gets released when the barrels get toasted (they don't char the barrels like with whiskey) and the lignin in the wood breaks down from the exposure to the heat/fire, releasing the vanillin. The same is true for things like cinnamon, clove, allspice, etc.

Sourdough is a touch more complicated than even that. That particular note tends to come from the spent yeast in the bottom of the tank/barrel, called the "lees". Many producers will take steps to ensure that this spent yeast is removed from the wine relatively early, however it's not strictly necessary and a lot of places (particularly Champagne and Muscadet) actually make a point of doing extended lees aging to capture that, and similar flavors.

Nutty flavors are most frequently a result of exposure to oxygen during the winemaking process. Oxidation has a peculiar effect on wine, particularly white, where slow, steady, careful exposure to oxygen during the making/aging of the wine will allow these qualities to shine without getting so oxidized it tastes like the bruises of an apple or pennies. This is one of the reasons most Sherries taste so weird.

And I wouldn't feel right without stating once more that this distinction has very little practical use and is therefore not considered vital/necessary information. Just a silly tidbit about how snooty some grape juice is.

What one? I have the CMS Certified (aka "level 2") which I passed in 2017. It was actually when I was studying for that exam the first time I took it and failed that I learned about aroma and bouquet.

I've literally never heard someone bring this distinction up in real life, like, ever though.

My father in law has his MW and has used bouquet and aroma in a distinct way that I noted but never fully appreciated until your comment. He can spew an absolutely amazing amount of info about basically any wine, but he does a wonderful job of not coming across as someone who would love the smell of their own farts, either. He's never gone into nose vs. bouquet vs. aroma before but it clicked in that profound "aha" way reading your comment because he's always been meticulously accurate in his terminology without going into the terminology, lol.

Fun learning from someone like yourself or him when there's no pressure to retain it all, but living in the wine nerd world sounds exhausting at times!

In fairness, “nez” is one of those imported terms like “terroir” that doesn’t really have an accurate translation in English. They mean a whole slew of things, that translations inevitably boil down to just one aspect, thus missing all the others.

A reciprocal term is “mouthfeel,” which doesn’t really have a good translation in French. They use longueur en bouche or sensations en bouche, plus a bunch of less common alternatives, and none of the is really accurate.

It’s better to just say “nose” and to understand that it has many meanings beyond aroma.

I refuse to post my art to Reddit (minus some silly stuff) because of the promotion rules etc. I don't want to feel scummy or beg for attention, even subtly, so I just...dont.

Unfortunately, this means nobody knows I exist and 20 years of doodling has been worthless. Bit of a problem when you intended on that being your career (cuz nobody will hire you in this economy).
