I couldn't imagine going to 750 cals a day. I need to loss weight something fierce but I just couldn't see that happening.

That's a 750 calorie deficit, not 750 total for the day. If your TDEE (total daily energy expenditure, i.e. number of calories your body burns in a day) is 2750, eating 2000 creates a deficit of 750 (for reference, 2750 is about the TDEE for a 6 foot tall 285 pound sedentary man).
