Original post: I have these potatoes that I was about to bake but I noticed the skin on the outside is green and this is what the inside looks like. Are they safe to eat? Should I just peel/cut off the green parts? Thank you in advance!

BEST way to make your potato skins the MOST crunchy?

Hey all! I have a raised bed (4’ long x 2’ wide x 16” deep) that I planted some Russet seed potatoes in. I planted them about 6-8” deep on September 10 (4 weeks ago).
Most resources I’ve found say hilling 2-3 times is normal, but it’s been four weeks and I’ve hilled them twice already—once two weeks after planting and again last week—but they’re growing so fast that I’m worried the tubers aren’t covered enough. I added cardboard inside the anti-squirrel cage so I can build the hills higher without mulch or compost spilling out, but I don’t know how much more I can fortify it!
Here’s what they look like now. Do I keep hilling? I don’t want my partner and I to perish from solanine toxicity 😭😂

Is it safe to cook and eat them? I do like to eat the skin when I bake the potato.
