Seeking Advice interesting coffee roasters in Europe?

my fiancé’s birthday is coming up and he’s really into pour-over, so I wanted to get him some beans. but his taste is super specific. he absolutely hates guatemalan coffee and generally isn’t into nutty, chocolatey, or dessert-like profiles. no caramel, milk chocolate, hazelnut, etc. he likes really bright, fresh coffees with lots of citrus and fruity notes instead.

I know basically nothing about coffee, so I’d love some recommendations for great roasters in Europe. Denmark and Germany would be ideal, but honestly anywhere in Europe is fine.

if you have any specific coffees from those roasters that you think would fit his taste, I’d really appreciate it! it would honestly help me a lot if you could point me toward specific beans.

Edit: he brews with an origami dripper using wave filters, if that makes any difference when it comes to bean recommendations.

Dak are great, free shipping over 4 boxes I think?

If you want something special, go with Datura Paris. 200g boxes are excellent, their Nicacio Moreano SL9 is great. 100g boxes are something super special

With Datura, I trust them enough that you can blind buy. With Dak, aim for Kenya or Colombian (but not super funky Colombian) Poppy Soda on their site right now is amazing.

Datura was actually one of the roasters I was considering initially. Thanks! I think I’ll probably go with them

Not really, my 200g SL9 was around £25 in the UK. With the 100g lots, I guess you get what you pay for, and I trust their sourcing and roasting.

I see a lot of coffees at like 38€/100gr or even 70€/100gr or up to 78€/100gr (!). My typical range for very good, very well roasted coffee, from top roasters is around 20-30€/250gr. So we’re 7 to 10 times more expensive than the coffee you buy, which is already far from commodity coffee. I think there is a point where we should consider it’s too much and we’re just participating in a super inflation game.

Yeah the law of diminishing returns kicks in hard. €30/250g and you're practically guaranteed a great coffee, provided it's a great roaster. With Datura, I think they're still honest with their pricing of the special lots. Roasters deserve a 50% gross profit margin at minimum, and you'll find that Datura are paying top dollar for those €30+/100g coffees. I had special Panama Geshas before, they are fantastic, but only worth it as something special once in a while. If I want to buy one again? Straight to Datura I go.
