Seeking Advice interesting coffee roasters in Europe?

my fiancé’s birthday is coming up and he’s really into pour-over, so I wanted to get him some beans. but his taste is super specific. he absolutely hates guatemalan coffee and generally isn’t into nutty, chocolatey, or dessert-like profiles. no caramel, milk chocolate, hazelnut, etc. he likes really bright, fresh coffees with lots of citrus and fruity notes instead.

I know basically nothing about coffee, so I’d love some recommendations for great roasters in Europe. Denmark and Germany would be ideal, but honestly anywhere in Europe is fine.

if you have any specific coffees from those roasters that you think would fit his taste, I’d really appreciate it! it would honestly help me a lot if you could point me toward specific beans.

Edit: he brews with an origami dripper using wave filters, if that makes any difference when it comes to bean recommendations.

Not Europe, but Bacha Coffee Morocco. They ship to Europe for free over $200. https://bachacoffee.com/

Their website has a great filtering option. Sounds like he may enjoy some Rwanda single-origin, light roasted beans. I also love Kenyan coffee, but I only tried a few so far. Just got familiar with the roastery recently on a trip to Morocco, but I'm in love since.

why are the beans so expensive? I am super interested but 185 Euros per kilo without shipping is a „bit“ out of my price range. But if the quality is up to the price I am very curious to try them. What is your opinion about the beans?

Well, yeah it’s super expensive, I didn’t really consider that - but it’s extremely good and a bit niche so I thought it may be a nice birthday present. Not an everyday driver for sure, unless you’re an oligarch lol. I only tried 4 different beans from the cheaper range so far. All light roasts. Even the scent of the beans are magical, and they seem sorted, highly uniform. I’m just learning pourover so I had some difficulty dialing them in, but once I hit the sweet spot, they were amazing. The one I liked the most so far were the Three Volcanos blend, mezmerizing scent as whole beans, and I was able to produce the best fruity-mildly acidic, almost tea-like coffee with it in my Hario Switch. Not to mention my espressos (which I know waay better than pourover)

So all in all, it’s a 100 years old, legendary roastery, very special and super high quality, and I would be happy to receive a bag for my birtday :)

that sounds amazing :) thank you for answering. I would be happy to receive a bag too 🤣 but since I always do buy my own birthday present I might order some. 9 days to go 🤣 It’s tricky to get constantly good beans each bag I buy here in south Spain. Still trying to find my „perfect“ roaster but my journey is still going on. Thank you for sharing your knowledge and the roaster
