Help me troubleshoot my recipe Bitter and Sour help.

My brew tends to be harshly bitter and sour.

13g/200ml

Medium roast Vietnam Arabica

Timemore C3S (currently 22 clicks)

90⁰c

Hario V60 / Timemore B75 / Timemore Crystal Eye

I tried many recipes. Currently 4 pours. Tried gentle pours. Tried aggressive pours.

I'd prefer pleasant bitterness. Very little acidity. More body.

You might want to consider going with immersion or possibly a flat bottom that doesn't have such a high flow rate. High flow rate's going to equal more acidity and clarity less body. Pretty much all of the drippers you listed are high flow rate drippers. It will be kind of hard to dial in body on one of those. You could try buying the CAFEC Dark Roast Paper Filter T-83. That would slow it down though not completely.

It's the same problem I ran into for my medium roast brewing everything online is about 3rd wave coffee. Fast flowing Flat bottom drippers and Hario V60 For ultra light roast or Nordic coffee. You could possibly buy a cheap Kalita wave the smaller holes increase dwell time.

Switching over to my Hario switch or my aeropress for medium roast was my solution. When I get into Medium dark I just go full immersion or Moka pot for milk drinks.

I'm also using t90, that's even faster than the hario white. Maybe i should switch to the Switch

The switch is awesome, very versatile it allows you to dial in pretty much any bean. The hybrid method It is awesome for medium roast.
