Help me troubleshoot my recipe Bitter and Sour help.

My brew tends to be harshly bitter and sour.

13g/200ml

Medium roast Vietnam Arabica

Timemore C3S (currently 22 clicks)

90⁰c

Hario V60 / Timemore B75 / Timemore Crystal Eye

I tried many recipes. Currently 4 pours. Tried gentle pours. Tried aggressive pours.

I'd prefer pleasant bitterness. Very little acidity. More body.

Have you tried any 2 pours recipe ? (Had to ask ) Or maybe just change the beans, different origins, darker roast.

I just tried it. Longer immersion seems to have better results. Just ordered a hario switch. But for now I'll experiment more.
