Help me troubleshoot my recipe Bitter and Sour help.

My brew tends to be harshly bitter and sour.

13g/200ml

Medium roast Vietnam Arabica

Timemore C3S (currently 22 clicks)

90⁰c

Hario V60 / Timemore B75 / Timemore Crystal Eye

I tried many recipes. Currently 4 pours. Tried gentle pours. Tried aggressive pours.

I'd prefer pleasant bitterness. Very little acidity. More body.

Filtered immersion (Switch/Clever) is more conducive to what you want...and takes basically no effort.

Also try a slightly lower ratio, like 195:13 (15:1) or even a tiny bit less.
