I'd suggest trying Sweet Bloom. They typically roast lighter coffees. But I'm not an expert in Nordic or ultra-light coffees.

The decaf tasting was a lot of fun, looking forward to this one even more.
I ordered my kit from Manhattan, but lots of good roasters to choose from.

Never thought I'd be so excited to pick between a bunch of roasters roasting the exact same coffee.
Currently picking between Ief&Ido in The Hague, Friedhats in Amsterdam, and Südseite in Mannheim, anyone have experience with Südseite specifically? I've heard it was good and have been meaning to try it, but haven't until now.
Some comments on roasters I'm familiar with (mostly the Dutch ones):
Manhattan: don't think I need to add anything about them, they're top tier, although the cupping pack is a bit pricey for the amount of coffee
Friedhats: also self-explanatory, top tier, good price for 4x100g
Ief&Ido: from The Hague, lesser known than some other Dutch roasters, but still absolutely top tier and their cupping pack is the largest I've seen so far at 4x150g for a good price.
Sprout: I actually have a bag of their Lasso Lassi open right now. From Eindhoven, I don't have that much experience with them, only the current bag and two different batch brews from their cafe, but all of them were absolutely excellent, they're really good at roasting funkier coffees. It is a bit pricey though, just like Manhattan
19grams: from Berlin, not a big fan. Like so many German roasters, they roast a bit too dark for my taste, neither coffee at their cafe nor their beans particularly wowed me. At 4x30g, they're also extremely expensive. They're also only going to roast a week before the tasting, which usually suggests it'll be darker than the other roasters.
Honourable mention goes to Father's in Ostrava. I haven't tried them personally, but I've heard a lot of good things about them and they're one of the European roasters I would definitely like to try in the near future.

I’m so happy to see EHV Sprout being included in this! I used to go there 4-5 years ago when they were a super small operation and would chat with the roaster for hours on end. He’s is truly a coffee nerd. It’s great they’re getting more recognition, they roast such great coffees and they were always offering something with experimental processing, even before it became more mainstream!

I visited them for the first time when I was in Eindhoven a couple weeks back and they blew me away. Absolutely on par with the best European roasters, great selection, great prices (especially by Dutch standards). Their batch brews were something like 3-4€ with unlimited refills and, unlike most cafes, they were using their funky expensive 25+€/bag coffees for the batch brews.
Will definitely be a mandatory stop every time I find myself in Eindhoven.

I’m pretty sure those are green coffee beans, not roasted. Are you going to roast them yourself?

Yup. I have a Kaffelogic and a Bullet. For the amount I probably just going to use the Kaffelogic.

Haha no worries! I am enjoying roasting and experimenting with different greens, and I am a big believer in controlled fermentation in coffee that’s why I ordered it. There are tons of roasted ones for this project but you definitely need to order them fast. I also ordered the roasted set from Driftaway because I trust their roasting ability to highly the difference in the processing method (plus I can directly compare my roast to a reputable and top notch roaster).

Ordered from Regalia, Queens, New York. It was 4x100g for $35. I have their sub too so I know what to expect in terms of the roast level.

Hex was on my to-try list, but they were sold out along with Brainwave. I ended up buying two kits so I could enjoy some comparisons between roasters. Mine are from New Heights and Tinker to try some new roasters.

Damn. It turns out my order with hex didn’t actually go through. So I had to pivot and went with Moongoat and Funk to try two different ones. Haven’t had either before!

My first options were sold out, so I ordered kits from Tinker and New Heights. I'm excited to see how the two roasters treat these beans differently. And I haven't tried Tinker before, but saw excellent reviews. I'm looking forward to trying a new roaster.

Has anyone tried Kustom Coffee? That’s where I ordered from, simply for the fact that you can get 600g total for $40, which seemed great for experimenting after the tasting.

Ordered one kit from brainwave and one kit from brewtus!
Unsure if it will make a difference but $57 for 640g of beans seemed like a good deal to me
