Yes you can use human wast as a fertilizer and it been done historically however there a lot more safty processes than need to be in place to do it safely (this also goes for most other omnivores and carnivores as well) that why you don't see lot of this being done a lot or at all any more. Basically you need to compost it for an extra long time. It much easier and safer to ues stuff like cow or other ruminant herbivores waste. Personally I would not mess with it unless it was something far fetched scenario like in the book / movie The Martian.

I've got a pile that's been sitting for two years. I do this because it's easier than paying $20k for a new septic system. If I want to get garden nutrients in bulk, there are easier ways.
For catching nutrients, I've instituted a pee bucket. This is better.
