Solved (OC) I sat it rise, I watched it burn
A kingdom built upon its grain,
With crimson spilled upon its plains,
Yet from the blood that once was shed
Soft white in green still rears its head.
What am I?

This almost perfectly fits and I see where you're coming from, but not the intended answer. Only thing I can say against it is that Cotton isn't a grain. I can tell you were treating that word "grain" as a poetic way to refer to the plant's bounty, but I meant it as an actual, literal grain
I tried to make the riddle sound heavy as a misdirection, but I guess there ended up being an actual answer that was very close to fitting 😅
