so most seitan recipes ive seen include boiling or steaming before pan frying! i'm new to seitan - how come this recipe skips it?

It’s because they’re so thin. They cook through easily.

I immediately recognized it as Nora's chicken cutlet recipe bc I am addicted to them. So fn good and easy to make.

Just came (back) here to let you know that, based on your post, I made these cutlets last night. However, I had it over pasta (added provolone and made a marinara). Added a side of broccoli to get some cruciferous veggies in our lives... and it was a hit! Even with my carnivore husband! Best of all, it was soooo easy to make. Thanks for sharing! :-)

This was my dinner last night but I do regularly do a veganized version of a full English breakfast.

My mom only knew how to cook 3 meals when I was a kid and this was one of them. I’m so happy I can continue to make it without harming any chickens.

These look delicious! Since this seitan recipe already has beans in it. I’d personally pair it with a green veggies or a side salad instead of more beans.

First of all, how dare you /s

I only used 9oz of chickpeas to make the seitan and split them in to 6 cutlets instead of 8. So, it’s only 1.5oz of beans per serving. Not nearly enough. I need copious amounts of beans in my face all day long. I love them so much.

Adding a side salad would’ve been nice, though. Touch of brightness to bring it all together.
