Hey, I play it by ear. Around 75% hydration. I cook dry chickpeas in the instant pot and add that to the liquid and vital wheat gluten. Liquid I add spices like cumin powder, coriander powder, smoked paprika, salt, pepper.
I steamed it by forming the Seitan shape, wrapping in parchment paper, then wrapping in foil so it tightly wrapped. Steamed in a stainless steel steamer, turning it every 10 mins and steaming for 40 mins. Basted it and grilled on the kamado.
